Stewed Frozen Tofu

Ingredients:

1 package Nigari Firm or Soft Tofu
10 oz Nappa or baby bok choy
5 mushrooms
½ lb shrimp
2 Spring onions
1 teaspoon Salt
1 cup water

Instructions:

1. Defrost the frozen tofu in water, then dice it.
2. Slice mushrooms and spring onions and cut nappa into 1 inch pieces.
3. Set wok (or non-stick pan) over medium heat and heat oil until it is very hot (but not to the point of smoking). Add spring onions, mushrooms and shrimps and stir-fry until fragrant.
4. Add nappa to stir-fry until soft.
5. Add tofu, salt and water and braise over low heat for 15 minutes.
6. Serve as is or with rice.
